Our Mission
Why We Started
Madrean Foods was built because we’ve listened to these struggles, and we’re here to reclaim our city's legacy of self-reliance together.
Who are we?
Madrean Foods is the culmination of our shared history and deep-rooted commitment to Tucson’s culinary community. We came here, discovered and fell in love with this city and it's culinary legacy.
A US Marine Veteran and A Returned Peace Corps Volunteer decided that we could make a difference.
Together, we bring over 20 years of experience in the Tucson Culinary Community to this venture:
Armando brings 15 years of operational expertise, having previously managed the local warehouse for Sterns right here in Tucson.
Keven has spent the last seven years on the ground, building personal relationships with chefs in the Tucson Culinary Community and is using that understanding to spearhead the co-design efforts of the company.

Our Local Providers
We're are always on the lookout for more local providers to join our network, enhancing our offerings and growing together.
Explore our offerings
We also provide conventional products at competitive prices.
Allows you to support the culinary community without breaking the budget.
We offer full access to a complete selection of conventional meat, poultry, and other proteins at highly competitive prices. Simultaneously, we are actively expanding our growing line of locally sourced products to provide even more regional options.
Founded in 1947, the Tampico Spice Company is a family-owned importer, processor, and distributor of high-quality herbs, spices, and custom seasoning blends based in Los Angeles, California. They supply products ranging from small grocery packets to bulk industrial drums to retail, food service, and manufacturing clients across the Western United States.
We offer a comprehensive selection of both conventional and local produce tailored to your kitchen's needs. For our conventional items, we source as close to the farm as possible to disrupt the inefficient "Phoenix loop" and deliver fresher products with fewer food miles. Additionally, we partner directly with local farms to build a seamless pipeline that brings fresh, regional harvests straight to local restaurants.
Our dairy and egg department offers a growing selection of high-quality products to support your menu needs. We provide reliable access to trusted conventional brands like Sarah Farms and Rose Acre Farms, ensuring consistent supply and competitive pricing. At the same time, we are actively reaching out to regional producers to expand our line with fresh, local dairy and egg options.
Driven by Customer Need, Filtered by Madrean Integrity
An Old-School Approach to Modern Shopping
We run our shop the old-fashioned way. Like the neighborhood general stores of the past, where the merchant personally stood behind every single product on the shelf.
Curated by Hand, Not Algorithms: Before endless digital aisles, shopkeepers hand-selected goods based on what their neighbors actually needed. We still do. Your practical, daily life is the only blueprint we use to stock our shelves.
Handshake Accountability: We reject the modern retail habit of filling shelves with high-margin junk just to make a quick buck. Like the merchants of old, we only stock goods we would use ourselves. We have to look you in the eye the next time we walk through your doors.
Quality Over Endless Choice: We don't believe in overwhelming you with fifty mediocre versions of the same item. We do the vetting, testing, and editing upfront so you can get what you need, and shop with total peace of mind.
Welcome to Madrean Foods
Rooted in Heritage. Rising to the Occasion.

Rooted in Heritage.
In the heat of a Tucson kitchen, we know that excellence isn't just about technique. It’s about the soil, the history, and the community that stands behind every plate. For thousands of years, the Madrean Sky Islands have stood as sentinels over our Sonoran Desert, providing life and nourishment to the people of the Tucson basin since time immemorial.
Rising to the Occasion.
At Madrean Foods, we believe it is time to reclaim that legacy of self-reliance. We are a food service company dedicated exclusively to the Tucson area. We don’t just deliver products; we honor the spirit of the region we serve by building a distribution system that is truly created by the community, for the community.

While the Madrean Foods name is new, our leadership, logistics expertise, and relationships in Tucson are deeply established. We aren't testing an unproven startup model; we are restoring a local distribution hub that Tucson's culinary community relied on for years.
Here is why you can depend on us from day one:
Proven Local Leadership: Managing Partners Armando Lugo and Keven Holt bring over 20 years of combined experience to Tucson's food industry. Most notably, Armando spent 15 years managing the local warehouse for Sterns Produce right here in town. He already knows your delivery windows, quality standards, and the exact logistics required to keep your kitchen running seamlessly.
Restoring a Proven Model: When the Sterns facility closed during the pandemic, Tucson kitchens lost their immediate, local warehouse source and were forced to rely on out-of-town distributors. Madrean Foods was built specifically to fill that physical gap, eliminating shipping delays and restoring fresh, local distribution.
Radical Accountability: If a delivery is delayed or an order needs a last-minute adjustment, you won't deal with automated corporate phone trees. You have direct access to Armando and Keven. Our business relies entirely on our local reputation, meaning we are fully incentivized to over-deliver on service.
Want to test the waters? You don’t have to switch your entire inventory overnight. Try us out as a secondary supplier for a small percentage of your conventional or specialty ordering to see our speed, quality, and communication firsthand.
It’s a common assumption that smaller means fewer options, but our inventory model is built to be smart, not small. We don’t just carry niche, specialty items. We are striving to provide a full range of conventional food service staples and supplies at highly competitive prices, alongside our curated local offerings.
Here is how we ensure you never have to compromise on variety or volume:
We Stock the Essentials: We are a complete food service partner. From high-volume conventional ingredients and kitchen staples to packaging and paper goods, we maintain the core inventory required to run a commercial kitchen day-to-day.
Agility Over Rigid SKU Lists: National distributors are bound by rigid corporate buying agreements. If a product isn't on their massive pre-approved list, you can’t get it. Because we are local and independent, we are highly agile. If your kitchen has a consistent need for a specific product, brand, or specialty ingredient, we can pivot quickly to source and stock it specifically for you.
Freshness Over "Sitting" Inventory: Giant out-of-town warehouses keep massive volumes of inventory sitting on shelves for days or weeks before it ever reaches Tucson. We run a lean, fast-moving, local pipeline. This means the food that arrives at your back door has spent less time in transit and storage, giving you better quality and a longer shelf-life in your kitchen.
A Central Hub for Local Providers: By acting as a single, consolidated hub for Southern Arizona's best regional producers, we actually give you access to a wider variety of unique, local ingredients than a national distributor could ever coordinate.
We don't need a million square feet of dusty warehouse space to keep your kitchen fully stocked; we just need to stock the right things, keep them incredibly fresh, and deliver them when you need them.
You should trust Madrean Foods because our business model makes it impossible for us to succeed by letting you down. We have tied our survival directly to the health of the Tucson culinary community, meaning we only win if our neighbors win.
Here is the concrete proof behind that commitment:
Accountability through Co-Design: We don’t ask you to trust a polished, finished product created in secret. By inviting local chefs, growers, and creators to actively shape what we do, we build accountability into our daily operations. You can trust us because you are in the room helping write the blueprint.
Interdependent, Not Extractive: To many companies take resources from a community and send the profits elsewhere. We reinvest our growth right back into the local culinary ecosystem. If we compromise our integrity or exploit our partners, we damage the very network we rely on to exist.
Actions Over Assertions: We show up as neighbors first. That means we don’t just wave a flag of local pride; we prove it by listening to tough feedback, honoring the culinary roots of the Sonoran Desert, and adapting when we make mistakes.
We don't expect blind faith. We expect to earn your trust through every collaborative menu item, every fair partnership, and every honest conversation across the counter.
Madrean Foods stands apart by rejecting the traditional, transactional model of food service in favor of a deeply relational, hyper-local culinary ecosystem. While most companies focus on top-down product development and standard customer retention metrics, our approach differentiates itself through three core practices:
Active Co-Design: Instead of deciding what to offer behind closed doors, we build our business in direct collaboration with local chefs, bakers, growers, and patrons. The community has a literal hand in shaping the business, making the inventory and experience a reflection of Tucson itself.
Shared Stakeholder Success: Local food creators and their guests aren't viewed merely as a target market, but as true stakeholders. This business operates under the belief that its own growth is inextricably tied to the health and success of Tucson’s broader culinary community.
The Neighbor Framework: Traditional corporate sales prioritizes speed, efficiency, and scripted politeness. Our model prioritizes listening, adaptation, and showing up for the community. Treating every person who interacts with us is like a next-door neighbor rather than a receipt number.
By tying business growth directly to the collective success of the Tucson Culinary Community we function more like a community hub than a standard food enterprise.
